Salad
- 2 Persian cucumbers (diced)
- 2 Roma tomatoes (diced)
- ½ red onion (diced)
- ¼ green pepper (diced)
- ¼ cup fresh parsley (chopped)
- 1 tablespoon fresh mint (chopped)
Instructions
- Prepare the tahini dressing: Place the tahini paste in a large serving bowl. Add the lemon juice, pressed garlic, salt, and black pepper. Use a whisk or fork to combine the mixture until it forms a thick, paste-like consistency.
- Adjust the consistency: Slowly add 2 tablespoons of water to the tahini mixture while continuing to whisk. This will help smooth out the dressing and create a creamy, well-blended texture.
- Add the vegetables and herbs: Add the diced cucumbers, tomatoes, red onion, green pepper, chopped parsley, and fresh mint on top of the tahini dressing. Gently toss everything together ensuring the vegetables are evenly coated with the creamy dressing.
