Description

Vanilla Bean Hummus is a sweet and creamy twist on traditional hummus made with white beans, agave syrup, cashew butter, and real vanilla beans. This easy no-cook recipe blends all ingredients into a smooth, luscious spread perfect for breakfast toast, desserts, or snacks.

Ingredients

Hummus Base

  • 1 and 1/2 cups white beans (cooked, or 1 can* (very well rinsed))
  • 1/4 cup agave syrup (or another sweetener of choice**)
  • 1/4 cup cashew butter
  • 1 pod vanilla beans
  • 1 tsp vanilla flavoring
  • 1/2 tsp fine sea salt

Instructions

  1. Prepare the Beans: Drain and rinse the white beans thoroughly if using canned beans, then set them aside to be added later.
  2. Blend Sweet Ingredients: Add the agave syrup, cashew butter, vanilla bean pod (scraped seeds), vanilla flavoring, and sea salt into the bowl of a food processor. Blend on high for one minute until the mixture is well combined and creamy.
  3. Add and Process Beans: Add the prepared beans to the food processor. Process for one minute, then remove the lid and scrape down the edges of the bowl to ensure even blending. Repeat processing and scraping 1-2 more times until the hummus is smooth and creamy. If the mixture appears too thick, add 1 tablespoon of water after each blending step until the desired consistency is reached.
  4. Chill and Serve: Transfer the vanilla bean hummus to a container and chill it in the refrigerator until ready to serve. This enhances the flavors and texture.

Notes

  • You can substitute agave syrup with maple syrup, honey, or your preferred sweetener.
  • Use well-rinsed canned white beans to reduce cooking time.
  • The vanilla pod seeds add natural vanilla flavor and texture; scrape carefully to include all the seeds.
  • Add water gradually to adjust thickness without thinning the flavor too much.
  • This hummus works great as a spread on toast, as a dip for fruits, or even as a sweet topping for desserts.
